     Crockpot Lentil Stew

Ingredients
2 lbs fresh pumkin or butternut squash into bite size pieces
1 cup lentils ( green)
1 large onion finely chopped
4 cups fat free vegetable broth
2 teaspoons tomato paste
Juice from 1 lime
1 tablespoon cumin
1 tablespoon ground ginger
1 teaspoon tumeric
 
1 teaspooon nutmeg
1 teaspoon salt
1/2 teaspoon black pepper
Fresh cilantro chopped
1/2 cup plain non-fat Greek yogurt

Instructions
In a 4 quart slow cooker, combine all ingredients except yogurt and cilatro. Cook 6 to 8 hours on low. Vegetables may be tender before that depending on your slow cooker. When ready to serve, top each serving with a heaping tablespoon of yogurt and some fresh cilantro.
I forgot the yogurt and cilantro and it was delicious without.
Serving Suggestions
It went great with pumpkin bread.
