     Rhubarb Pie

Ingredients
2 cups rhubarb
1 cup sugar
1/2 cup milk
2 eggs
pinch of salt
2 Tbsp flour
 

Instructions
Preheat oven to 350 degrees. Scald rhubarb and drain; Place in unbaked pie crust. Combine sugar, milk, eggs, salt and flour to make a custard. Pour over rhubarb. Dot with butter (and vanilla, optional) Bake until custard set and knife inserted in middle comes out clean.
