     Apple Betty

Ingredients
2 pounds firm apples, such as Golden Delicious
1/4 cup seedless golden raisins
1/2 cup thawed frozen apple juice concentrate
1 Tbsp cornstarch
5 slices bread cut into small cubes to make 2 cups.
3 Tbsp unsalted butter, melted
3 Tbsp sugar
1/2 tsp cinnamon
 

Instructions
Preheat oven to 375 degrees. Coat inside of shallow 5-6 cup baking dish with nonstick vegetable oil cooking spray. Core, pare and quarter apples; cut into thin slices. Combine with raisins in prepared baking dish. In bowl, Gradually stir juice concentrate into cornstarch until smooth. Pour over fruit mixture. Sprinkle with topping. (see instructions below) Cover with foil. Bake 30 minutes. Remove foil and bake 20-25 minutes until apples are tender.
Topping Instructions- Take 5 slices of white or whole wheat bread. Cut into small cubes to make 2 cups. Place in medium bowl; Set aside. In small saucepan. combine butter, sugar and cinnamon; mixing well while heating slightly. Slowly pour mixture over bread cubes, tossing gently with a wooden spoon until well blended. Ready to sprinkle onto batter in baking dish.
Serving Suggestions
Serve hot or warm with ice cream or whipping cream.
