     Oatmeal Rhubarb Crunch

Ingredients
1 cup flour
3/4 quick oats
1 cup brown sugar, packed
1/2 cup melted butter
1 teaspoon cinnamon
4 cups diced rhubarb
1 cup sugar
2 tablespoons cornstarch
1 cup water
 
1 teaspoon vanilla

Instructions
Preheat oven to 350 degrees.
Mix flour, oats, brown sugar, melted butter, and cinnamon until crumbly. Press 1/2 of mixture into greased 9 inch baking pan.
Cover crumb mixture with diced rhubarb. Combine last 4 ingredients. Cook until thick.
Pour sauce over rhubarb. Top with remaining crumbs and bake for one hour.
Serving Suggestions
Serve warm with whipped topping.
