     Veggie Cheese Ravioli

Ingredients
1 pkg. (9 oz.) refrigerated cheese ravioli
2 sm. zucchini, julienned
1 med. onion, chopped
1 can (14-1/2 oz.) diced tomatoes, undrained
2 T. chopped ripe olives
3/4 t. Italian seasoning
3 T. shredded Parmesan cheese
 

Instructions
Cook ravioli according to pkg. directions. Meanwhile, in a lg. nonstick skillet coated with nonstick cooking spray, cook & stir the zucchini and onion until tender. Stir in the tomatoes, olives & Italian seasoning. Bring to a boil. Reduced heat; simmer, uncovered, for 5 min.
Drain Ravioli and add to the pan; stir gently to combine. Sprinkle with Parmesan cheese.
