Ingredients
1 (15 ounce) pkg Pillsbury Refrigerated Pie Crusts
3/4 cup sugar
1 1/2 tsp pumpkin pie spice
1/2 tsp salt
1 (16 ounce) can pumpkin
1 1/2 cups Evaporated milk
2 eggs, beaten

Instructions
Prepare pie crust according to package directions for one-crust filled pie using 9 inch pie pan
Preheat oven to 425 degrees. In a large bowl, combine all filling ingredients; blend well. Pour into pie crust-lined pan. Carefully transfer to oven rack. (I place mine on cookie sheet) Bake for 15 minutes at 425 degrees. Reduce oven temperature to 350 degrees; Continue baking 40-50 minutes longer or until knife inserted in center comes out clean. Move to wire rack; Cool completely. Refrigerate until ready to serve.
If homemade topping- I take a carton of heavy cream with about a couple teaspoons to a tablespoon of sugar in a bowl; using whisk beater, I beat until forms stiff peaks.
Serving Suggestions
Top with Reddi-wip whipped topping or homemade whipping cream
