     Pumpkin Torte

Ingredients
24 Graham crackers, crushed
1/2 cup sugar
1/2 cup butter, melted
2 eggs
1 pkg (8 ounces) cream cheese, softened
1/2 cup sugar
1 pkg Knox gelatin
 
1/2 cup cold water
3 egg yolks
1 can (16 ounces) pumpkin
1/2 tsp salt
1/3 cup white sugar
1/2 cup milk
1/2 tsp cinnamon
3 egg whites, beaten stiff
1/2 cup powdered sugar

Instructions
Preheat oven to 350 degrees. Mix cracker crumbs, sugar and butter; press into 9x13-inch pan Beat 2 eggs, cream cheese and sugar; Pour over crumb mixture; Bake 20 minutes. Dissolve gelatin in 1/2 cup cold water; Set aside Beat 3 egg yolks in bowl. Add pumpkin, salt, sugar,milk and cinnamon; mix well; set aside. In double boiler, add dissolved gelatin; Cook until thick. Add 3 beaten egg whites with 1/2 cup powdered sugar to pumpkin mixture. Spread over cooled cream cheese; Let stand until set.
Serving Suggestions
Serve with Whipping cream
