Boil spinach until tender, drain well and cool. Boil lasagna until tender, drain well and cool.
In a large bowl, mix well ricotta cheese, eggs and all dry ingredients. Add spinach to cheese mixture and mix again.
Take a noodle and place a heaping tablespoon of mixture on the end of the noodle. Roll it up and place in a lasagna pan in single rows. Do not layer one roll on top of another.
Pour your favorite Italian red sauce or white sauce over rolls. Top with parmesan cheese or mozzarella. Bake at 350 degrees until bubbly.
