     Lemon Raspberry Mousse

Ingredients
1 6 oz lemon jello
1 box vanilla wafers
1 1/2 c. boiling water
1 1/2 c. ice cubes
16 roz. cream cheese, softened
16 oz. Cool Whip, thawed and divided
1 c. raspberry preserves, divided
 

Instructions
Cover bottom of 9x13 pan with nilla wafers. In mixing bowl add boiling water to jello and stir until dissolved. Stir in ice cubes until melted. Set aside. In separate bowl, beat cream cheese & sugar until well blended. Gradually add jello and then cool whip and stir well. Spread half mixture evenly over wafers and top with another layer of wafers. Microwave preserves about 1 minute and spread over wafers. Pour remaining jello mix over top. Refrigerate overnight. Option- top with fresh fruit such as blackberries or sliced strawberries for additional flavor and visual appeal.
