     Oh-So-Good Mashed Potatoes

Ingredients
6 medium Yukon Gold potatoes
Potato cooking water (or nonfat soymilk)
4 Tbl. nutritional yeast
Freshly ground black pepper
1 tsp. garlic granules or powder
 

Instructions
Cut potatoes into small chunks, put into a pot, cover with water, and boil until tender (about 10 minutes). Carefully drain the potatoes, saving the cooking water. Put potatoes in a bowl and beat with a hand mixer, adding and beat with a hand mixer, adding potato cooking water until the desired consistency is reached. They will need more water than you might expect. Add nutritional yeast, pepper and garlic and beat more.
