     Peanut Butter Minus Cookies

Ingredients
3/4 c. brown rice flour
1/2 c. shelled roasted peanuts
1/4 tsp. sea salt
1 1/2 c. smooth peanut butter
1/2 c. maple syrup
1/2 tsp. vanilla extract
Optional topping follows.
1/2 c. vegan chocolate chips
2 Tbl. organic canola oil
 
1 tsp. maple syrup

Instructions
Preheat the oven to 350F. Mix the dry ingredients together in a medium bowl. In a large bowl, thoroughly blend the peanut butter, maple syrup, and vanilla. Pour the dry ingredients into the wet ingredients all at once. Stir until just barely moistened. Scoop the batter onto a parchment-lined cookie sheet using a 2-inch scoop. Flatten with a fork. Place in the oven and bake for 12 minutes, or until the bottoms are lightly browned. Remove the cookies from the baking sheet with a spatula, and let cool on a wire rack.
While cookies are cooling, if you are making the topping, combine the chocolate chips, oil and maple syrup in the top of a double boiler over simmering water. Whip until smooth. Drizzle over the cookies as they cool.
