15 oz can low-sodium black beans, rinsed and drained
1 cup hot cooked long-grain rice
Instructions
Heat oil in a medium saucepan over medium heat. Add onion and bell pepper; cook 5 minutes or until tender, stirring occasionally. Add garlic; cook 1 minute.
Add water and next 7 ingredients (through beans); bring to a boil. Cover, reduce heat, and simmer 10 minutes or until thoroughly heated.
Stir cooked rice into bean mixture. Sprinkle each serving with 1 Tbsp shredded cheese if desired.
