Mis the salt, pepper, thyme and lemon zest in a small bowl. Rub the chicken with the butter. Season the cavity and the skin with the mixture. Stuff hte lemon into the cavity and truss the chicken. Place on a rack in a roasting pan. Roast at 375 degrees for 1 hour or until the juices run clear and the chicken is cooked through. Remove the chicken to a serving platter. Cut the twine and remove the lemon.
