In a large skillet, cook the sausage, mushrooms & onion over medium heat until meat is no longer pink; drain. In a large bowl, whisk the eggs, milk, mustard, salt & pepper.
In a greased 9x13 pan layer 1/2 bread cubes, tomatoes, cheeses & sausage mixture; repeat layers. Pour egg mixture over the top.
Bake uncovered at 325 fro 50-55 minutes or until a knife inserted in center comes out clean. Let stand for 10 minutes before serving.
