     Healthy Turkey Lasagna

Ingredients
26 oz jar no-fat garlic and herb pasta sauce
14 oz can diced tomatoes
8 oz can mushroom stems and pieces, drained
20 oz packages frozen chopped spinach, thawed
1 lb tenderloin of turkey breast, thinly sliced
1 T olive oil
1/2 c chopped celery
1/2 c chopped green onions
1/2 c chopped green and red bell peppers
 
16 oz reduced-fat ricotta cheese
16 oz reduced-fat cottage cheese
1/4 c grated parmesan cheese
9 cooked lasagna noodles
1 c no-fat mozzarella cheese
tomato slices, fresh parsley and ground pepper

Instructions
Combine the pasta sauce, tomatoes and mushrooms in a bowl and mix well. Squeeze the spinach to remove excess liquid. Saute the turkey in the olive oil in a skillet for 4-5 minutes. Add the celery, green onions, bell peppers and spinach. Cook the vegetables tender-crisp. Combine the cottage cheese, ricotta, and parmesan in a bowl and mix well. To assemble, spread 1/2 c of the sauce mixture in out 9x13 Baking Dish sprayed with Pam. Layer 3 of the lasagna noodles, 1/3 of the cheese mixture, 1/2 of the turkey mixture and 1/3 of the remaining pasta sauce mixture in the prepared dish. Continue layering with 3 lasagna noodles, 1/2 of the remaining cheese mixture, remaining turkey mixture and 1/2 of hte remaining pasta sauce. Top the layers with the remaining lasagna noodles, remaining cheese mixture and remaining pasta sauce mixture. Bake, covered, at 350 degrees for 20 minutes. Uncover, bake for 10 minutes longer. Sprinkle with the mozzarella cheese. Garnish with tomato slices, parsley and
pepper.
