     Irish Stew

Ingredients
1 kg lamb diced
6 potatoes
4 carrots copped
1 onion
1/2 cup pearl barley
1 carton chicken stock
1 tbl spoon sage, rosemary, thyme and parsley
Salt and Pepper to taste
 

Instructions
Sauté the lamb with the chopped onions add salt and pepper. Add all the other ingredients and stir gently so the potatoes are just covered with stock (add water if necessary). Put lid on pot. Pressure or slow cook this for an hour or two until the lamb is very tender. Add more salt a pepper to taste.
