Ingredients
6 potatoes
6 raw spring onions chopped finely
1 cup milk or cream
1 cup of boiled curly Kale or Spinach leaves
Salt and Pepper
1 big knob of butter
Money or gold ring wrapped in foil
 

Instructions
Boil and mash potatoes with milk or cream. Add spring onions and curly Kale. Season with salt and pepper. Hide the money or rings. When serving place knob of butter on top.
Serving Suggestions
Colcannon is normally eaten around Halloween. Money or a gold ring is wrapped in foil and hidden in the colcannon for the children to find
