     Longaberger Homestead Meat Loaf

Ingredients
3 lb ground beef
1/2 c chopped onion
2 T chopped celery
1/2 t horseradish
1/2 c tomato sauce
1/2 c ketchup
1 T dry mustard
1/2 T garlic
1/2 T worcestershire sauce
 
1/2 T salt
1 t pepper
3 eggs
3/4 c bread crumbs

Instructions
Crumble the ground beef into a large bowl. Add the onion, celery, horseradish, tomato sauce, ketchup, dry mustard, garlic, worcestershire sauce, salt and pepper and mix thoroughly. Add the eggs and bread crumbs and mix well. Divide into 2 equal portions. Shape each portion into a loaf. Place in 2 of our Loaf Dishes. Bake at 350 degrees for 1 hour or until a meat thermometer inserted in the center of each loaf registers 160 degrees. Cool for 8-10 minutes before serving.
VARIATIONS- Hickory Smoked Meat Loaf; wrap the meat loaf in bacon before baking for a wonderful smoky flavor. Spicy Meat Loaves; decrease the ground beef to 2 1/2 lbs and add 8 oz Italian sausage. Turkey Meat Loaves; substitute fresh ground turkey for the beef. Add 1/2 c chopped celery, 1/2 c chopped bell peppers and 1 t cumin. Bake until a meat thermometer inserted in teh center of each loaf registers 165 degrees.
Hot Texas Meat Loaves- substitute your favorite salsa for the ketchup and add 1 t cumin and 1/2 c chopped green onions. Reserve 2 T of the salsa for brushing the top of the hot meat loaves.
