Pout 1/2 of the butter into an 8 inch baking dish, being sure to coat the bottom. Place the potatoes in the prepared dish. Sprinkle with the dill, kosher salt, pepper and lemon zest. Pour the remaining butter over the potatoes. Palce on the middle oven rack. Bake at 425 degrees for 45-60 minutes or until crisp and golden brown. Sprinkle the potatoes with additional dill, kosher salt and lemon zest if desired.
