     Green Bean Saute

Ingredients
4 c water
salt to taste
1 lb snapped fresh green beans
1/4 c olive oil or sesame oil
1/4 t salt
1 T lemon juice
1 T grated lemon zest
2 garlic cloves, cut into slivers
 

Instructions
Bring the water and salt to taste to a boil ina saucepan and reduce the heat to medium. Add the green beans. Cook, covered, for 10 minutes or until tender; drain. Pour the olive oil into a saucepan. Add 1/4 t salt, lemon juice, lemon zest and garlic. Saute over medium heat for 2-3 minutes or until heated through (do not let garlic take on color). Arrange the green beans on a serving platter. Drizzle with garlic mixture.
VARIATIONS- Broccoli Saute, use 1 bunch of broccoli instead of the green beans.
Zucchini and Yellow Squashe with Red Pepper Strips- substitute 3 zucchini, 1 yellow squash and 1 red bell pepper for the green beans. Rinse the zucchini and yellow squash. Cut hte squash into strips with a vegetable peeler until you hit the seeds (strips will resemble noodles). Cut the bell pepper ito julienne strips.
