     Grilled Corn on the Cob

4 ears of corn in the husk
1/4 c mayo
1 T lime juice
1/8 t cayenne pepper, or to taste
3/4 c crumbled feta cheese

Soak the corn in the husks in cold water in a large pan for 10 minutes; drain. Place the corn on a grill rack set 5-6 inches above glowing coals. Grill for 10 minutes or until the husks are charred. Pull back the husks, exposing the corn kernels and return to the grill rack. Gril for 10 minutes or until the kernels are brown in spots. Whisk the mayo, lime juice and cayenne pepper in a small bowl. Brush ovr the hot corn and sprinkle with the feta cheese.
Oven Roasted Corn on the Cob; Oven to 350 degrees. Soak the corn in large pan of water 10 minutes. The moisture is important to prevent the corn from drying out. Drain the corn. Place directly on the middle oven rack. Bake for 15-20 minutes. Pull back the husks and serve as above.
