     Cold Rice and Vegetable Salad

Ingredients
1 1/3 c uncooked long grain rice
1/3 c lemon juice
2/3 c olive oil
1 T minced green onions
1/2 t salt
dash of pepper
1/2 to 1 t curry powder
1/2 t dry mustard
1/4 c chopped fresh parsley
 
3/4 c chopped cooked chicken, optional
1 c fresh cauliflower florets
1 c frozen green peas, cooked, chilled
1/2 c chopped celery
1/2 c sliced radishes
romaine

Instructions
Cook the rice using hte package directions. Add the lemon juice and olive oil adn toss lightlly. Spoon into a large salad bowl. Chill, covered, for several hours. Combine the green onions, 1/2 t salt, pepper, curry powder, dry mustard and parsly in a bowl and mix well. Add to the chilled rice and toss to mix. Add the chicken, cauliflower, peas, celery adn radishes and toss lightly. Serve on romaine-lined serving plates.
Note- the easiest way to cook rice without undercooking or burning it is to boil in a large saucepan of salted water like pasta. Drain the rice, shake off the excess water and return to the saucepan over heat. Fluff the rice with a fork to help evaporate any remaining moisture.
