Mix the flour, baking powder and salt in a bowl. Cut in the shortening and cheddar cheese until crumbly. Add the milk and stir to incorporate. Drop by rounded spoonfuls onto an ungreased baking sheet. Bake at 450 degrees for 8-10 minutes or until golden brown. Brush with melted butter and serve immediately. Makes 6-8 large biscuits or 12 small biscuits.
VARIATIONS- Spicy Cheese Biscuits, add 2 T chopped chiles, 1/2 t cumin, and 1/4 c chopped fresh parsly or cilantro tot he batter.
Plain Biscuits, eliminate teh cheddar cheese and increase the shortening to 6 T and teh milk to 1 cup (if you want your biscuits to have a more definite shape, bake in greased muffin cups). These biscuits can be used to make sandwiches or strawberry shortcake not so plain.
