     Spiced Pear Muffins

Ingredients
1-1/2 c. all-purpose flour
1/2 c. oat bran
1/2 c. packed brown sugar
2 t. baking powder
1/4 t. salt
1/4 t. ground cinnamon
1/8 t. ground allspice
2 egg whites
1/2 c. fat-free milk
 
1/4 c. canola oil
1 egg
4 t. grated orange peel
1/2 t. vanilla extract
2 med. pears, peeled & chopped

Instructions
In a lg. bowl, combine the first seven ingredients. In a sm. mixing bowl, beat egg whites on high speed until stiff peaks form. In another bowl, whisk the milk, oil, egg, orange peel and vanilla; stir into dry ingredients just until moistened. Fold in pears, then egg whites.
Coat muffin cups with nonstick cooking spray; fill three-fourths full. Bake at 350 degrees for 20-25 min. or until a toothpick comes out clean. Cool for 5 min. before removing from pan to a wire rack.
