Servings   makes 1 3/4 cups

3 eggs
1/2 c fresh lemon juice
1 c sugar
1/2 c unsalted butter, melted

Beat the eggs in a double boiler until frothy. Stir in the lemon juice, sugar and butter. Cook over simmering water for 16 minutes or until slightly thickened, stirring constantly. Remove from teh heat. Spoon into a small container. Let cool at room temperature. Chill, covered, for at least 2 hours before serving.
