Beta the eggs in a large mixing bowl. add the oil, sugar and vanilla and mix well. Stir in the apples. Add the flour, cinnamon and baking soda andstir gently. Add the pecans and mix well. Pour into a greased and floured 9x13 cake pan. Bake at 325 degrees for 1 hour or until a toothpick inserted in teh center comes out clean.
