PREHEAT oven to 350° F. Paper-line or grease 24 muffin cups.
Combine flour, pumpkin pie spice, baking soda and salt in medium bowl.
Combine sugar, pumpkin, eggs, oil and applesauce in large bowl; mix
well until blended.
Add flour mixture to pumpkin mixture; stir just until moistened. Do no
overmix but you don't
want a lot of streaks of flour visible.
Spoon batter into prepared muffin cups (an ice-cream scoop works
well), filling 3/4 full.
