Heat oven to 375. Grease 12 muffin cups
In a skillet, heat oil over med-high heat. Cook chicken in oil 5-7 minutes, stirring occasionally, until chicken is no longer pink in chenter. Add onion, cook 2-3 minutes. Add broccoli, salt and pepper, stirring occasionally until mixture is heated through. Cool 5 minutes; stir in cheese.
In medium bowl, stir baking mix ingredients until well blended.. Spoon 1 scant T mixture into each cup. Top with about 1/4 c. chicken-broccoli mix. Spoon 1 T. baking mix onto chicken in each cup.
Bake about 30 minutes or until it tests done and tops are golden brown. Cool 5 minutes. With thin knife loosed edges and turn out onto rack with top side up. Cool 10 minutes longer and serve.
