Sweet Potato Hash with Baked Eggs

300g sweet potatoes, scrubbed and cubed
|

half a Savoy cabbage, shredded
|
|
1 small red onion, sliced
|

4 medium eggs
|
|
1 tbsp soy sauce
|

Instructions |

|
Boil sweet potatoes for 10 mins, cabbage for 2
mins.

Mix potatoes, cabbage, soy sauce, salt & pepper.
|
|
|
Heat 2 tbsp oil in a large frying pan. Fry onion
for 1-2 mins. Add potato and cabbage mix and fry,
stirring, for a few minutes.
|

|
Make four hollows in the mixture and crack an egg
into each. Cover with a lid and leave for 8-10 mins
until eggs are cooked through.
