     Turkey Piccata

Ingredients
1/4 c flour
1/2 t. salt
1/4 t. pepper
1 pkg. turkey breast cutlets
2 T. olive oil
1/2 c. chicken broth
3 T. butter
1 T. lemon juice
1 T. minced fresh parsley
 
1T. capers, drained

Instructions
In a shallow bowl, combine the flour, salt and pepper. Add turkey slices, one at a time and turn to coat. In large skillet, add broth. Bring to a boil; cook untilliquid is reduced by half. Stir in butter and lemon juice; cook and stir for 30 sec. or until butter is melted. Add parsley and capers; pour over turkey.
