In a mixing bowl, mix eggs, salt, pepper and
cayenne. add cream and mix again until evenly
distributed.
In a non stick pan, add the butter or oil and heat
until its simmering. add in the chorizo and fry
until the butter turns a light red colour and the
chorizo is browned. toss in the diced peppers and
just blanch them in the butter.
Add the eggs to the mixture and stir until eggs are
cooked to your preference. I prefer less runny.
