     Blueberry Pie

Ingredients
1 1/4 cups of plain flour
1 tsp baking powder
125g unsalted butter
1/4 cup shredded coconut (optional)
1 egg
1/2 cup cup of brown sugar
1 tsp vanilla essence
1 cup frozen blueberries
 

Instructions
Melt the butter in a saucepan on low heat, or in a microwave for about 15 seconds. Rest the butter for a few minutes until it reaches room temperature. In a mixing bowl, combine the flour, baking powder, sugar, vanilla essence, egg and butter with a knife. (Optional- You can add shredded coconut, but leave this out if you are concern about getting coconut stuck in your teeth). Knead a few times until you get a play-dough like consistency. Cover the bowl with cling wrap and let the dough rest for about 10-15 minutes. When your dough is ready, preheat your oven to 180 degrees (fan forced). Pinch about 2/3 of the dough and line a 20x20cm greased cake tin with the dough, to create the base. Then fill the base with frozen blueberries, and crumble the remaining dough over the top. Bake at 160 degrees Celsius for 15 minutes or until it is slightly golden.
Serving Suggestions
If you are feeling fancy, sift some icing sugar on top. Serve it with a scoop of vanilla ice-cream or yoghurt. The pie can be kept fresh for up to 3 d
