Melt the butter in a saucepan on low heat, or in a
microwave for about 15 seconds. Rest the butter
for a few minutes until it reaches room
temperature.
In a mixing bowl, combine the flour, baking
powder, sugar, vanilla essence, egg and butter
with a knife. (Optional- You can add shredded
coconut, but leave this out if you are concern
about getting coconut stuck in your teeth). Knead
a few times until you get a play-dough like
consistency. Cover the bowl with cling wrap and
let the dough rest for about 10-15 minutes.
When your dough is ready, preheat your oven to 180
degrees (fan forced).
Pinch about 2/3 of the dough and line a 20x20cm
greased cake tin with the dough, to create the
base. Then fill the base with frozen blueberries,
and crumble the remaining dough over the top.
Bake at 160 degrees Celsius for 15 minutes or
until it is slightly golden.
