     Mexican Meat Mix

Ingredients
5 lb beef roast or combination of beef and pork
3 T. shortening
3 onions, chopped
4 oz can chopped green chilies
2 (7 oz) cans green salsa
1/4 t. garlic powder
4 T. flour
4 t. salt
1 t. cumin
 
juice from roast

Instructions
Preheat oven to 200. Place roast in large roasting pan or dutch oven. Do Not Add Salt or water. Cover with a tight fitting lid and roast 12 hours until well done OR cook in slow cooker OR cookin in pressure cooker with 1 c. water for 35-40 minutes. Drain meat , reserving juices. Cool meat and then remove bones. Shred meat and set aside. Melt shortening in a large skillet; add onions and green chilies, saute 1 minute. Add green chili salsa, garlic powderk flour, salt and cumin. Cook 1 minute overmed-low heat. Stir in reserved juices and shredded meat. Cook 5 minutes until thick. Cool. Put about 3 c. mix into 3 1 qt. freezer containers. Seal and lable containers. Freeze and use within 6 months.
