     Joanne's Potato Soup

Ingredients
6 diced potatoes
1/2 c chopped onions
2 stalks chopped celery
2 t salt
2/3 t pepper
8 slices of bacon
2 T flour
2 c milk
 

Instructions
Place potatoes, onions, celery, salt and pepper in a swoup pot. Cover with water and cook until tender. Fry bacon saving 6 T of drippings. Make a white sauce of drippings, flour and milk. Add white sauce to soup. Crumble bacon and add to soup. heat thoroughly.
Joanne's mother made this for her family every Monday because it was Wash Day. The soup was well liked, easy, economical and above all, quick.
