     Vegan Mucho Nachos

Tortilla Chips
4 servings brown rice (cooked in Not-Beef broth)
3/4 cup TVP
1 1/4 cup Not-Beef broth
1 packet taco seasoning
15 oz. can black beans
15 oz. can petite diced tomatoes
1 1/2 cup frozen corn
Chipotle seasoning
15 oz. can vegetarian refried beans
Sliced black olives
Fresh or dried cilantro

Heat broth to boiling. Add TVP and taco seasoning and remove from heat. Set aside.
Combine beans, corn, tomatoes, and chipotle seasoning. Heat until warm in microwave.
Heat refried beans until warm in microwave.
Lay tortilla chips out on individual plates and load with toppings. Garnish with black olives and cilantro.
