     Tapioca Quick Pudding

Ingredients
3 Tbsp tapioca
1/3 cup sugar
1/8 tsp salt
1 beaten egg
2 3/4 cups milk
3/4 tsp vanilla
 

Instructions
In saucepan, mix tapioca, sugar, salt, egg and milk. Let stand 5 minutes. Then bring mixture to a full boil, stirring constantly. Remove from heat. Stir in vanilla. Let stand 20 minutes; Stir. Put in serving container. Serve warm or refrigerate until ready to serve.
