     Cheesy Potato Leek Soup

Ingredients
2 T. butter
2 large leeks, white and part of green sliced
1 small onion, chopped
1 1/2 lbs. potatoes, peeled and cut into 1 inch pieces
2 chicken bouillon
1/4 t. salt
1/8 t. nutmeg
1/8 t. cayenne
1 c. shredded cheddar cheese
 

Instructions
Melt butter over medium heat. Add leek and onion. Cook covered for 10 minutes. Add potatoes, bouillon, salt, nutmeg, cayenne, and 6 c. water. Bring to a boil. Simmer, covered for 35 minutes or until potatoes are tender. Puree mixture in batches, add cheese, stirring until melted.
