Beat butter and sugar together at medium speed with an electric mixer X 2 minutes. In a separate bowl, beat in egg and vanilla.Combine flour, salt and zest, gradually stir into butter mixture.Mix until stiff dough forms.

Divide dough into 3 equal pieces (about 1 1/4 cups each). Tint one piece with yellow food coloring- knead by hand until blended. Tint second piece with red and yellow food coloring to make orange. Leave third piece plain.

Line a 9 x 5 loaf pan with plastic wrap,smoothing against sides and bottom. Place white, untinted dough into bottom of pan, pressing down to even the surface. Repeat with orange, then yellow doughs. Cover tightly and chill at least 2 hours.

Turn dough out onto floured work surface. Cut in slices approx 1/2 inch thick. Then cut each slice into 6 equal triangles to create corn shapes. Place cookies on foil or parchment paper- lined cookie sheets. Bake @350 for 8-9 minutes until cookies are set but not browned. Cool on wire rack. Yummy!!!
