1 1/4 C. PANKO BREADCRUMBS
1/2 C PARMESAN CHEESE
2 T. FRESH PARSLEY
1 1/2 t. FRESH THYME
SALT AND PEPPER
1/3 C. FLOUR
2 EGGS BEATEN
8 THIN PORK CULTETS
4 T OLIVE OIL
 

Instructions
COMBINE BREAD CRUMBS,CHEESE,PARSLEY,THUME 1 t. SALT 1/2t. PEPPER. SPRINKLE CHOPS WITH SALT AND PEPPER.DREDGE WITH FLOUR SHAKING OFF EXTRA DIP IN BEATEN EGGS LETTING EXCESS DRIP OFF. DREDGE CHOPS IN PANKO MIXTURE PRESS GENTLY ON BOTH SIDES.
WARM 2 T. OIL IN LARGE SKILLET OVER MED-HIGH HEAT. ADD 4 CHOPS TO SKILLET COOK 3 MIN ON EACH SIDE TURNING ONLY ONCE TILL LIGHTLY BROWN AND COOKED THROUGH. WHIPE OUT SKILLET, DO SAME WITH REMAINING CHOPS KEEPING FIRST BATCH WARM WITH LOOSELY COVERED FOIL.
