     Glazed Ham with Mustard Sauce

Ingredients
8-9 lb ham (bone in, fully cooked, spiral ham)
1/4 c bourbon
1 c light brown sugar
1/2 c whole grain mustard
1/2 c pure maple syrup
zest of 1 orange
1/4 c fresh orange juice
MUSTARD SAUCE-
1/2 c mustard
 
3 T pure maple syrup
freshly cracked pepper, to taste

Instructions
Oven to 300 degrees. Position the racks to allow room for the ham on the lowest rack. Place ham in a large roasting pan. Combine the glaze ingrdients in a medium mixing bowl and spoon over the entire ham. Cover loosely with foil and bake 30 minutes. Remove the foil and baste the ham with glaze every 15 minutes for an additional 45-60 minutes (fully cooked hams need 10-12 minutes per pound to reach an internal temperature of 140 degrees). Remove ham from oven and raise the temperature to 425 degrees. Pour most of the cooking juices into a small bowl. Spoon some of the juices over the ham, then return to the oven for 5-8 minutes, or until the ham is golden brown. Transfer teh ham to a platter. Loosely cover it with foil and let set for 10 minutes before serving. Serve with Mustard Sauce.
Mustard Sauce- Combine all the ingredients inan airtight container. Shake vigorously. The sauce will keep for serveral weeks in the fridge.
