     Fresh Pineapple Sauce

Ingredients
2 c fresh pineapple, cut into 1-2 inch pieces
2 T dark rum or almond liqueur
1 T chopped fresh mint
1-2 T sugar, optional
 

Instructions
Puree pineapple in a food procesor; or for chunky sauce, puree half and dice the rest. In small bowl, combine pineapple with rum and chopped mint. Mix thoroughly and taste; depending on the pineapple's sweetness you man need to add up to 2 T sugar. Sauce may be prepared 1 day in advance and refrigerated in an airtight container.
