     Corn with chile-lime butter

Ingredients
1 stick unsalted butter, softened
1 1/2 teaspoons minced garlic
juice of 1 lime
1 tablespoon fresh cilantro (plus more for topping)
1 tablespoon ROCATO CHILE PASTE (available at latin markets)
1/2 teaspoon ground cumin
salt and fresh ground pepper
8 ears corn, husks and silk removed
crumbled cotija cheese, for topping
 

Instructions
Preheat a grill to medium high. Combine ingredients in bowl. Add salt & pepper and mix well.
Grill the corn, turning nicely until charred, 10-15 minutes. Serve with a spoonful of flavored butter and sprinkle with cilantro and cotija cheese.
