     Curried Chicken Tea Sandwiches

Ingredients
24 slices thin white bread
1 reipe Curried Mayonnaise (recipe below)
1 English (seedless) cucumber, sliced very thin
2 whole cooked chicken breasts, bones and skin removed, sliced very thin
1/3 c sliced almonds, toasted and cooled
CURRIED MAYONNAISE-
3/4 c real mayo
2 T curry powder
1/2 t sea salt
 
1/4 c chutney
1/4 c golden raisins (a moister, plumper raisin)

Instructions
Spread the Curried Mayonnaise on two slices of bread. Layer one sliec with 4 cucumber disks, 4-5 slices of chicken, and sprinkle with a few almonds; place other slice on top. Carefully trim the crusts with a seratted knife. Cut n half. Repeat porcess with the remaining ingredients. Place sandwiches on a tray lined with wax or parchment paper and cover with damp paper towels and then plastic wrap. Store in fridge until ready to serve. The sandwichesmay be assembled 2-3 hours in advance.
CURRIED MAYONNAISE- combine all ingredients in a small mixing bowl and blend well. Store in an airtight container in the fridge. Curried Mayonnaise may be prepared up to 2 days in advance.
