1 head cauliflower, broken into small florets (4 cups) core discarded
1 head broccoli florets, broken into small pieces (about 4 cups)
1 green bell pepper, diced (1 cup)
1 red onion, minced (1 cup)
1 c mayo
2 T sugar
1/3 c white vinegar
1 1/2 t dijon mustard
salt and freshly cracked black pepper, to taste
Instructions
Place prepared vegetables in mixing bowl. Whisk together the mayo, sugar, vinegar and mustard. Pour over the vegetables and gently toss. Seal vegetables in an airtight container or plastic bag and refrigerate overnight. Season with salt and pepper, to taste. Keep chilled until ready to serve.
