     Chicken Curry

Ingredients
2 Tablespoons butter or margarine
1 small onion, finely chopped
1 medium clove garlic, crushed
3 Tablespoons all-purpose flour
1 teaspoon curry powder
1/2 teaspoon salt
1/8 teaspoon pepper
1 can (about 14 oz) chicken broth
1 unpared medium apple, cored and thinly sliced
 
1/2 medium green pepper, thinly sliced
2 cups cubed cooked chicken
1/2 cup raisins

Instructions
In a large, heavy saucepan, melt butter over medium heat. Add onion and garlic and sauté until tender-about 5 minutes. Blend in flour, curry powder, salt and pepper. Cook over low, stirring constantly, until bubbly. Remove from heat; stir in chicken broth. Add apple and green pepper. Cook over medium heat stirring constantly, until thickened and smooth. Stir in chicken and raisins;heat through. Serve with over rice.
May also use lamb instead of chicken.
