     Berry Cream Muffins

Ingredients
2 Eggs
1 C. Sugar
1/2 C. Vegetable Oil
2 C. Flour
1/2 tsp. Salt
1/2 tsp. Baking Soda
1 tsp. Baking Powder
1 C. Sour Cream
1 Cup Fresh Berries
 

Instructions
Preheat oven to 400 degrees.
Beat eggs with mixer. Add sugar, oil, vanilla and mix well between each addition. In another bowl, mix together flour, salt, baking soda, and baking powder. Mix flour mixture and sour cream alternately into the egg mixture, 1/3 at a time. Gently fold in berries and spoon into muffin cups.
Bake for 15-20 minutes.
Tips and Tricks- I put sanding sugar on the top of the muffins before I bake them. I like the crunchy sugar on the top. You can also use frozen berries instead of fresh. Just increase the baking time by 5 minutes.
