     Fiesta Eggs

Ingredients
1 pound bulk sausage
1 (10 ounce) can diced tomatoes and green chilies
1/2 cup hot chunky salsa
1 (4 ounce) package cubed Velveeta cheese
10 eggs, slightly beaten
1/2 cup sour cream
2/3 cup milk
 

Instructions
Preheat oven to 325 degrees. Brown sausage and drain on paper towels. pour tomatoes and green chilies, salsa, and cheese in skillet and cook, stirring constantly, until cheese melts. Remove from heat. Beat eggs in bowl with 1 1/2 teaspoons salt, sour cream and milk. Fold in sausage adn tomato - cheese mixture. Transfer to sprayed 7 x 11 inch baking dish. Bake uncovered for about 25 minutes or until center is set.
