     Ranch Sausage and Grits

Ingredients
1 cup instant grits
1 pound hot sausage
1 (8 ounce) package shredded sharp cheddar cheese, divided
1/2 cup hot salsa
1/4 cup (1/2 stick) butter, melted
2 eggs, beaten
 

Instructions
Preheat oven to 350 degrees. Cook instant grits according to package directions. In skillet, brown sausage and drain. Combine cooked grits, sausage, half of cheese, salsa, melted butter and eggs and mix well. Pour into sprayed 9 x 13 inch baking dish. Bake uncovered for 50 minutes. Sprinkle remaining cheese over casserole. bake for 10 additional minutes. Serve with hot biscuits.
