Cube and boil potatoes until they are fork-tender. Remove from heat and drain. Run under cool water for a few seconds and shake. Let potatoes set about 30 minutes. While potatoes are cooling, cook bacon till crisp. Add onion in the last few minutes. Remove bacon and onion with slotted spoon to drain. Let set until bacon is cool. Combine last 4 ingredients and add to potatoes in large bowl. Crumble bacon over the top and toss gently.
