     Gorgonzola-Stuffed Dates

Ingredients
8 ounces pitted dates
1-2 ounces Gorgonzola dolce
1 ounce whole roasted almonds
 

Instructions
Stuff the dates with almonds (several may be needed for large Medjools) and a generous amount of cheese. The dates can be prepared a few days ahead, covered tightly and kept refrigerated. Bring to room temperature or warm slightly before serving.
Any type of date will work, but Medjools are especially large. There are about 15-18 average-size dates per 8 ounces.
Serving Suggestions
Great as after dinner or part of cheese course.
